PantherDave
Nice family weekend on tap, anf the CP will be cooking up some three meat chili, and my elusive fav 3rd meat was availabel-holidays and stuff. My theroy on Chili is this-choose your bean (pinto or kindney or beanless) some diced tomato's, onion, green pepper, choose your powder( I like McCormick-Extra Hot) I always have meats 1(ground round 93 % lean) and 2 (ground pork)-the 3rd meat is usually ground turkey, since some meats are less common ground. However, got some fresh ground lamb for Sunday's batch, and have used ground venison, ground chicken, ground buffalo, and last but not least-ground ostrich , and they were all very good-my fav's are lamb and buff for the 3rd meat. Follow your basic chili receipe, as it can be done faster on the stove in a large pot or dutch oven. Will have fresh green pepper, onion and jalepnos, plus a few habeneros. Grated sharp and mild cheddars, oyster and saltine crackers-Cold Beer. Now some Football... I look for the Eagles to be playing for their play-off lives, and take the Boy's at home Monday night. Cowboys 20 Eagles 23 Bon Appetite and Good Luck on the Homer Front and FF wise-Peace PD.
The Holy Roller
Sounds good PD. Tomorrow is the opening day of deer gun season here in Missouri and the crew here will be having VENISON in the chili if the mighty white hunters can shoot straight, lol. I like the three meat idea! Funny you should mention the ostrich meat. One of my former basketball players is the daughter of some folks here who have an ostrich farm. It is very lean and tastes delicious... . typhus
Here in Colorado I use Elk tenderloins cut into small chunks, and ground venison for the meat. But my trick is using several different types of red chilis. I use a dark new mexico red, as well as several others including a little bit of a smoked chipotle chili that I had shipped back from Mexico last year. End result is a very rich tasting, very warm, ans satisfying bowl of red.

Fantasy Jesus
Once again a great read. Making my shopping list right now and headed to the supermarket in a little bit. My starting meats today for my chili . . . RB1 = Ground beef. RB2 = Ground pork. RB3 = Ground Turkey (questionable) - I might have to audible to chicken if the turkey turns out to be a game time decision. Homer prediction for the day . . . Chief Dick
We were actually thinking about doing some chili today. Not sure yet what is on the menu. Probably won't crank up the smoker today. I've done enough food for everyone this year, so I think someone else is taking a turn today. Maybe I'll just head to PD's house for some chili. The Holy Roller
None of the great white hunters got a deer yesterday... So, no venison in today's chili. Much beer will be consumed to deaden the pain...

Rovers
Italian sauce, meatballs, hot and sweet Italian sausages and vermicelli. Salad, toasted garlic bread. I make a killer sauce. (don't forget to add a bit of sugar to cut the acidity)
