whomper Posted November 19, 2005 Share Posted November 19, 2005 Italian Fried Rice Balls 2 cups long-grain rice 1 quart homemade chicken stock 1/2 cup (1/4 pound) butter, melted 1/4 cup chopped parsley 1/2 cup grated cheese (Parmesan or Romano) 2 eggs, well beaten 1/4 pound lean ground beef 1/4 pound lean ground pork 1/2 cup each (diced, about 1/4 inch) Genoa salami Mortadella Provolone cheese Mozzarella cheese 2 additional beaten eggs for dipping 2 cups Italian seasoned bread crumbs for coating Peanut oil for deep-frying Cook rice until tender. Drain and rinse. Pour rice in a large bowl and add eggs ,Parmesian cheese, parsley,chicked stock and melted butter. Mix well. Brown the beef and pork. Take the rice mixture and lay it flat in your hands, make an indentation in the center, add the meat and cheeses. Add rice on the top to form a round ball roll in bread crumbs and put aside. Heat oil and fry rice balls until a golden brown. Remove and put on a paper towel. Serve after cooling for 10 minutes Quote Link to comment Share on other sites More sharing options...

Except had to revise the rice mixture a little since adding the chicken stock made it too runny to form balls. Had to add bread crumbs to the rice mixture. Great nonetheless.
