There's a place up on 128th (Mill Creek / Everett) called Frida's that serves some of the best authentic mexican food you will ever find.  The Camarones Picantes is an amazing dish.

Shrimp Enchiladas

 

2 tbs olive oil (divided)

1/2 C red pepper (diced)

1/2 C onion (minced)

1 jalapeno (cored,seeded, minced)

1 green chili (cored, seeded, minced)

1/2 tsp garlic (minced)

1/2 tsp dried oregano

1/2 tsp salt

pinch of black pepper

pinch cayenne

3 tbs corn starch

3 tbs water

1 C milk

1 C grated monterey jack (divided)

1/4 C sour cream

1 lb shrimp (peeled, deveined)

3/4 C green onion (chopped, divided)

2 tomotoes (seeded, diced)

8 tortillas

 

preheat oven to 350. grease baking dish. in large saucepan heat 1 tbs oil (med heat). add bell peppers, onion, jalapeno, green chili, garlic, oregano. cook until tender.

 

in a small bowl combine corn strarch and water. mix well and add to pepper mixture. add milk... reduce heat, simmer until it thickens slightly (3-4 min). add 1/2 of the jack. stir until melted. remove from heat and stir in sour cream.

 

in a large skillet... heat remaining oil on high heat. add shrimp and 1/2 C gr. onions. stir unil shrimp is pink. stir in 1/2 of the bell pepper mixture and half of the tomatoes. remove from heat.... roll tightly in tortillas... place seam down in baking dish.

 

top enchiladasremaining half of pepper mixture...cover with foil...bake about 30-40 min. top with remaining half of jack, green onions, and tomatoes......

 

garnish with guacamole, salsa...or whatever you like....

Depends on your taste in mexican food.  If you're looking for a good taco or enchilada, there's a taco bell on every corner.  If you want real Mexican food, this is the place.

I've had taco bell once and never went back that is not Mexican food. It tastes like crap. I would rather go to a taco bus. Aight, I'll be sure to check it out sometime.

Sounds like you might enjoy it then. The only complaints I've heard about it are from people who want americanized mexican food. Anything beyond a taco and they turn their noses up.
