Bonehand Posted January 31, 2006 Share Posted January 31, 2006 I'm looking for something new to try for my SB party, and in the Saveur 100 issue last month they featured a recipe for Philly Cheesesteak Spring Rolls. Bier Meister Posted January 31, 2006 Share Posted January 31, 2006 i have used something similar as an hors d'oeurve over crostini instead of won ton wrappers.... very good. i did roast beef, honey horseradish sauce, carmelized onion (or shallot), white cheddar. Bonehand Posted February 4, 2006 Author Share Posted February 4, 2006 So I tried these tonight to give 'em a test run before My Superbowl party, & they were great! The recipe calls for Top sirloin shaved thin. This leaner cut worked better than the standard rib eye for Cheesesteaks, since you're frying the thing in oil canola anyway. For some reason the recipe didnt call for onion, probably for moisture considerations, but I added it anyway, and it belongs there. frying up the filling as you would for cheesesteaks, you add small cubes of provolone, just for a minute until they melt a little. Then you paint the eggroll wrappers with egg yolks, fill & roll. It took me one or 2 to get my rolling technique down, & I had my oil a little hot & charred the first one. But they turned out tasty & satisfying. The Ketchup/Dijon/Honey/Cayenne Dipping sauce needs a little work, a little more heat & vinegar maybe, but otherwise, they are good to go for the SB. I'll will prep 'em early so I just have to fry them at halftime, & my partygoers should be dazzled! Quote Link to comment Share on other sites More sharing options...
