I like to get some nice thick butterfly chops, sprinkle with garlic salt and Lawry's, slap them on the grill over med-high coals, about 3-4" above the coals-usually depending on the thickness 10 minutes. People tend to over-cook pork due to triganosis scare, but the pork industry has pretty much done away with this problem years ago(got this info from the Chef at my club).
