spain
We are having a party at my house tonight for about 30 people from my work. I am getting 3 cases of beer and we have a few bottles of wine. But I want to buy about 5-10 more bottles of wine. There will be some hodeves like boiled shrimp, chips and salsa, cheese and fruit trays, etc. But no sit down meal food. Can you guys give me a few suggestions for wine that these unsophisticated pallets would enjoy?

Cold whites are safe, especially with shrimp, fruit, and many cheeses. You could have such a wide range of tastes that it shouldn't be too hard. Pick up a couple rieslings because people with very little experience with wine will enjoy them over anything dry and oaky like a chard. A Cote Du Rhone will go great with many of the stronger cheeses. Normally, I would suggest something like a syrah with spicy food, but with undeveloped palettes, you're still probably safer with sweeter whites. With light appetizers like you're having, a Rose' might fit as well.
