Fourth of July Dishes

Going to my mother-in laws for a BBQ... so, we are basically told to bring whatever appetizer/side/dessert we want... basically, the main course and some sides will be there in addition to whatever we bring.

 

SO, my wife gets the Kraft Food and Family freebie magazine, and I am thumbing through it last night, and dang, there are a lot of good looking recipes in there... I'll just substitute my personal favorite brand of some ingredients in lieu of the reciped Kraft brand (though many times the Kraft brand is my favorite)

 

SO, I decided on 3 dishes for tomorrow (not making the guac again as very few people at this event like guac)

 

I will be making:

sun dried tomato and garlic dip

a cream cheese dip with herbs and lemon zest and a balsamic vinagrette for flavoring

a dessert that is basically a layer of pound cake, topped by a layer of fruit filled jello, topped by a cream cheese frosting then top that with strawberries and bluberries to make it look like the flag

well..... today should have been an easy little half day for me we had a little party of 30 that we needed to do apps (5:30p), salads (6:00p), and entrees (6:30p)... was in at 2p. am off tomorrow. as a result, i want to make sure that whoever is in is in good shape.... so i was a prepping machine... we had no dishwasher tonight so i jumped in and cleared that out too. then these Oprahers took and extra hour.... ended up plating their entrees around 7:45. i get home and wife is holding the baby and says she's getting pretty hungry......

 

so...while i like to cook.... i need to sit down for a few minutes..... it's times like these when i really like gas grills :D:D a lot of times i am hungry after work and don't want to spend a lot of time cooking late at night.

 

 

on a day off it is never an issue..... i'd spend the whole day in the kitchen (and drinking some wine or bier).... i love entertaining.

I grilled some shiskaboobs that I made for the first time....awesome

 

Marinated chicken and shrooms in some soy sauce, oil, honey, green onion, and cider vinegar...wrapped the chicken with bacon and threw in some pineapple...tasted great!

Yp Bier -

 

The sour cream tip helped out on the sundried tomato dip.. next time I make it I am going to reduce or eliminate the mayo from the recipe and go with te sour cream instead I think.

 

Tonight I'll be grilling some steaks that have been marinating in a balsamic vinagrette/A-1 steak sauce/garlic/oregano marinade for about a day and a half... that with some grilled peppers and some rice or something.. yum yum

A little late, but here's a recap of the Neutron Family grub over the holiday:

 

First corn on the cob of the season

 

First fresh salsa made of the season

 

Brats and burgers on the grill

 

Macaroni and Potato salads

 

Baked beans

 

Pretty traditional stuff - was enjoyed by all. :D

Let me know how that marinade works out for you BC. I'm always leary about keeping beef in a marinade too long as it sometimes gets a bit mooshy.

Traditional or not, thats sounded great!

Marinade was very good.... I would say something closer to 8 hours would be better, but the steak was not mushy.. came out a very nice tender steak with a good flavor with the kick of oregano afterwards.

 

I'd reccomend trying it.
