Fish tacos

My wife bought a bunch of Tilapia fillets and last weekend I had a great ceviche at an outdoor party which inspired the following:

 

Tilapia Fillet

1 or 2 Avacados

1 onion

Garlic

Tomatoes

lots of fresh cilantro

3 or 4 jalapenos or a couple Hab's

3 or four limes

salt and pepper to taste

Tortillas

schredded cabbage

 

Steam the Tilapia and set to the side. Dice up the Avacado, onion, garlic, tomatoes, cilantro and jalapeno's and combine with the juice of the fresh squeezed limes and the fish. Strain lime juice and throw into you taco shell or tortilla with some cabbage and enjoy. I would have made a yogurt sauce to go with this but didn't have the time so we used sour cream. But I think I will try a plain yogurt or yogurt sauce next time! Maybe some shrimp or crab next time... :D

for a fried version:

 

2 C bier

2 C flour

1/4 C sugar

pinch of cumin

pinch of chili powder

pinch of garlic powder

 

can either pan or deep fry.

 

for sour cream:

2-3 tbs fresh dill

1 C sour cream

juice of half lime or lemon (your preference)

a little milk to thin

what if the taco is more like a grilled cheese and you can't open it........only doin this cause you are.... :D

 

 

Just add a little Rohypnol and your taco will open right up...

 

I knew this would degenerate right after I posted it!! :D

Interesting that this topic popped up today.

 

I had halibut tacos last night. No recipe but here's the general idea:

 

Cut the halibut into small pieces. Marinade in lime \ chipotle marinade overnight (again, no recipe...just start throwing things together...and always have chipotles on hand). When ready to cook, dredge pieces in flour and lightly fry them up. Serve with spiced corn, beans, and plenty of guac.

I had some excellent fish tacos the other night. I'm not sure exactly what was in them, but here's my guess:

 

pan fried talapia

onion

cabbage

tomato

lime

avacado

and a little strong jack cheese - this was a real difference maker!

 

Of course it helped that they were served on good corn tortillas - not flour!

If my fish taco has cheese on it, I wont eat it. And if it has that distinct smell of Femunda, I wont eat it. I have eaten a fish taco or two that had some chunky salsa on it... :D
