broncosn05 Posted August 16, 2006 Share Posted August 16, 2006 (edited) For the last few weeks, my family's bought fresh meat from the deli and then a few spices for burgers at the grocery store. These things are incredible! I don't think I could ever eat another frozen burger again. Interested in seeing what you guys use when your grilling. It takes a bit more time to prepare them, but no longer than half the time it takes for the coals to heat up and they're incredible. Frozen burgers = The ones that come in 12 packs in the bags. Fresh burgers = The ones that come in 4 packs that come like they're defrosted. Fresh ground quality chuck or sirloin is a must. Loosly form the patties - don't pack it tight. Add whatever you like - I like fresh onion and jalepeno. Adding other dry mixes like Lipton onion soup mix can be tasty. I like using Montreal Steak Seasoning once in a while. I tried a little liquid smoke the other night and everyone liked it. darin3 Posted August 16, 2006 Share Posted August 16, 2006 Eh, I'm like the anti-JN. To me, a burger is like sex. Even when it's not all that good, it's still... well... good. Frozen burgers can be good if you know how to prepare 'em. Of course, given the choice, yes I will take the fresh meat... I love dousing mine in Worchestire... a little bit before they're on the grill, maybe 10-20 minutes. Then, once on the grill and cooked up a bit, after a flip, a little more... and some seasoned salt. That's all I really ever need. Maybe a little fresh ground pepper. I'm like Big John: nothing on my burger. If you cook the thing right, you should WANT to taste the meat (and cheese of course). Mustard, ketchup, onions, etc.... that just ruins it, IMO. Big Country Posted August 16, 2006 Share Posted August 16, 2006 i always prefer to use fresh ground beef. put some chopped garlic in there, or some worcestershire, or, i sometimes like to lightly dust with chili powder before grilling.. but, i think that a good quality meats flavor can be accentuated by the lettuce, tomato and onion, cheddar and bacon, etc... sometimes bacon and avocado are good too. 4BOLTS Posted August 17, 2006 Share Posted August 17, 2006 Tip #1 - Always use ground with 9-12% fat. The less fat, the more dry the burgers. Tip #2 - Patties should be approx 1/2" thick in the center and thicker around the edges. They'll even out during cooking, but this allows for a more consistent and even cooking. Tip #3 - One Flip, NO smashing. Tip #2 helps with the even cooking, but sear the burger to seal in the flavor. Flip once and sear the secondside. Never smash or flatten the pattie, just squeezes the flavor out, make the meat dry and tough. Tip #4 - Try making a "sandwich" with two thin patties; add a favorite cheese the top of one pattie (Blue cheese crumbles are awesome). Place the second pattie over the chese and seal the edges of the two patties together. Sear and slow cook to your desired wellness. Grill On Hud Friends! What a coincidence! I've EATEN about 20,000 burgers in my day Hugh is exactly right. The above beef, with salt, fresh ground black pepper, and a light dusting of fresh Cayenne are the ingredients I roll with. As far as onions, if the beef is good, I agree with the previous post that you don't need to mess with perfection, I'd rather have the onions (raw OR lightly grilled, while your at it) on the bun. I've always felt that a burger is greater than the sum of it's parts, so use the freshest ingredients. Other than that, I'm pretty old school. I like just the basics: Cheese: Good Amer, Cheddar or Blue Onions Lettuce Tomato dill pickles, sliced long (no relish!) Heinz (only) Ketchup Best foods/Hellman's (only) mayo mustard Occasionally a little avocado, but usually I save that for grilled chicken sandwiches (but that's a post for another day...)
