Grilling Burgers

For the last few weeks, my family's bought fresh meat from the deli and then a few spices for burgers at the grocery store. These things are incredible! I don't think I could ever eat another frozen burger again. Interested in seeing what you guys use when your grilling. It takes a bit more time to prepare them, but no longer than half the time it takes for the coals to heat up and they're incredible. :D

 

Frozen burgers = The ones that come in 12 packs in the bags.

Fresh burgers = The ones that come in 4 packs that come like they're defrosted.

Make your own = See above

I never eat burgers that have been frozen. It's one of the few things I do to eat a little better.

 

Fresh ground quality chuck or sirloin is a must.

 

Loosly form the patties - don't pack it tight.

 

Add whatever you like - I like fresh onion and jalepeno. Adding other dry mixes like Lipton onion soup mix can be tasty. I like using Montreal Steak Seasoning once in a while. I tried a little liquid smoke the other night and everyone liked it.

 

Good salt and pepper.

 

Sear 'em at a high temp and finish at med low.

Eh, I'm like the anti-JN. To me, a burger is like sex. Even when it's not all that good, it's still... well... good.

 

Frozen burgers can be good if you know how to prepare 'em. Of course, given the choice, yes I will take the fresh meat...

 

I love dousing mine in Worchestire... a little bit before they're on the grill, maybe 10-20 minutes. Then, once on the grill and cooked up a bit, after a flip, a little more... and some seasoned salt. That's all I really ever need. Maybe a little fresh ground pepper.

 

I'm like Big John: nothing on my burger. If you cook the thing right, you should WANT to taste the meat (and cheese of course). Mustard, ketchup, onions, etc.... that just ruins it, IMO. OK a little ketchup doesn't hurt. But not on the bun; that sogs it up. Just a little dipping ketchup. :D

often keep frozen available for those late night dinners i have (quick). those just go into a frying pan. when i actually grilling, fresh.

 

bbq, bacon, cheddar

swiss, mushrooms

teriyaki

grilled onion, thousand island (ala in-n-out)

bacon, ranch

i always prefer to use fresh ground beef.

 

put some chopped garlic in there, or some worcestershire, or, i sometimes like to lightly dust with chili powder before grilling..

 

but, i think that a good quality meats flavor can be accentuated by the lettuce, tomato and onion, cheddar and bacon, etc... sometimes bacon and avocado are good too.

Tip #1 - Always use ground with 9-12% fat. The less fat, the more dry the burgers.

 

Tip #2 - Patties should be approx 1/2" thick in the center and thicker around the edges. They'll even out during cooking, but this allows for a more consistent and even cooking.

 

Tip #3 - One Flip, NO smashing. Tip #2 helps with the even cooking, but sear the burger to seal in the flavor. Flip once and sear the secondside. Never smash or flatten the pattie, just squeezes the flavor out, make the meat dry and tough.

 

Tip #4 - Try making a "sandwich" with two thin patties; add a favorite cheese the top of one pattie (Blue cheese crumbles are awesome). Place the second pattie over the chese and seal the edges of the two patties together. Sear and slow cook to your desired wellness.

DMD's cheezit burgers are pretty frigin' awesome :D

 

If fresh, a mixture of chuck and sirloin at about 12% fat are the best and most consistent and I have cooked probably 20,000 burgers in my day. No sheet, that's a lot :D In fact I griiled burgers for our annual Little League picnic two weeks ago. That was well over 200 right there. Don't know why, just LOVE to cook meat over flames :D

What a coincidence! I've EATEN about 20,000 burgers in my day :D

 

Hugh is exactly right. The above beef, with salt, fresh ground black pepper, and a light dusting of fresh Cayenne are the ingredients I roll with.

 

As far as onions, if the beef is good, I agree with the previous post that you don't need to mess with perfection, I'd rather have the onions (raw OR lightly grilled, while your at it) on the bun.

 

I've always felt that a burger is greater than the sum of it's parts, so use the freshest ingredients. Other than that, I'm pretty old school. I like just the basics:

 

Cheese: Good Amer, Cheddar or Blue

Onions

Lettuce

Tomato

dill pickles, sliced long (no relish!)

Heinz (only) Ketchup

Best foods/Hellman's (only) mayo

mustard

 

Occasionally a little avocado, but usually I save that for grilled chicken sandwiches (but that's a post for another day...)

I enjoy making pizza burgers and have never gotten anything but great reviews. This is the recipe I use:

 

2 lb. ground sirloin

1 cup chopped pepperoni

1/3 cup grated Parmesan cheese

2 tbsp canned pizza sauce

8 slices thick Provolone cheese

Salt and pepper

8 x onion cheese buns

 

 

Place sirloin, pepperoni, Parmesan cheese and pizza sauce into a large bowl. Mix ingredients until well combined

Form 8 burger patties.

pPreheat the grill to medium high heat.

Drizzle burgers with oil and season with salt and pepper.

Place burgers on grill and cook for 5 minutes on each side.

Place an additional dollop of pizza sauce on each burger.

Place a slice of cheese on each burger for final minute of cooking.

Place buns on grill for 1 minute or until toasted. Close lid and allow cheese to melt.

Remove burgers and serve on toasted buns.

It does sound good except I'm not a pepperoni fan. However, I'm thinking I may substitute andouille sausage and try them out.

I'm doing these tonight on the Egg, with my own variations:

andouille sausage for pepperoni

tomato sauce instead of pizza sauce, but I'm adding herbs to flavor it up

blue cheese rather than provolone (I like blue cheese on my burger)
