georgemoe Posted September 1, 2006 Share Posted September 1, 2006 My garden tomatoes are starting to come in quickly. I'll probably have 50-60 or so by early next week. Other than giving them away to family and friends like I have been, what ideas do you have. I could do up some tomatoe sauce or make some salsa but I'm looking for any other ideas huddlers may have. I've been eating fresh mozz and tomatoe salads with basil and balsamic all week. I love it but the tomatoes will rot before I could eat it all. You could try fry some with sausage, onions and peppers. It doesn't use a lot, but it is a change of pace. Plain old tomatoe sandwiches work wonders. Duh..Gazpacho. You must make Gazpacho. Run out there today, grab all the green ones you can, toss the slices into seasoned corn meal then into your Fry Daddy. Don't get much better than that. Mrs. HR (bless her Italian soul) makes this by the gallons during tomato and cucumber season. I could live on it. Goes with every meal you can make.
