We used to have everyone make two meals for a 10 day hunting trip... I finally got tired of eating pasta with Ragu sauce and those frozen hockey puck hamburgers! So about ten years ago I negotiated that the other four guys would set up the tents and I would heckle them and drink G and T's and beer's... I never really held up my end of the bargain as I can't sit still for to long and end up helping out... especially if there is a snow storm watering down my G - n - T!! Tommorow nights menu is Rosemary leg of lamb with mint jelly Saturday night Carbonara Sunday night Beer Brats and New Mexico Hatch Pork Green Chile Monday Rib Eyes over a Mesquite bed of coals Tuesday night is Speedie Night...my wife is from Upstate New York, those of you from there know what I am talking about! The rest of the meals will be in Steamboat, because I was lazy this year... The Chile I made this year was pretty easy and TASTY... Sear pork in some oil Sear buttefllied Hot Hatch Green Chiles and Jalepenos in oil Puree 7-10 Tomatoes Add spices you like ... Cumim, pepper, oregano, salt etc... Combine and let simmer for a few hours. Sounds like a great spread. There's no need to eat poorly, even while "roughing" it. I usually eat some great meals while on camping / fishing / hunting trips as well. Just another reason to look forward to them. Chili and beef stew are on the menu - maybe rabbit stew if the kids can shoot straight. I'm no gourmet, but the grub coming from the dutch ovens will be tasty. He used to bring me a case of marinade every time he went home, but I recently discovered that the local Harris Teeter grocery chain carries Salameda brand!!
