Looking for a fantastic soup

5 onions (finely sliced)

1.5 c marsala

.5 c sweet vermouth

2 gallons of beef stock

.5 cup sherry

3 bay leaves

3 springs of thyme

3 branches of parsley

5-10 peppercorns

 

 

slowly saute onions in large pot over low/me heat for about 2-3 hrs. stir every 10 min... the longer you go the more frequently you need to stir. if there is any cooking to fast add a couple of ounces of water. deglaze with marsala and vermouth. reduce by half. add stock. brign heat up.. bring to boil.. then simmer for about 30 min- 1 hr. create a seasoning bag (sachet) wuth coffee filter and string.... put the bay leaves, parsley, thyme and peppercorn in.... add sachet to soup for the duration of simmering... then discard... add sherry.....

 

best served with gruyere melted over toasted baguette slices.

That sounds fantastic Bier!!! Will do that with the family over. However, if you have something more hearty, cooking for a bunch of guys who will be staying out late Saturday, that would be fantastic.

Staunton, about 50 miles south of Springfield and 30 miles east of St. Louis. Guess that would be more South Central. Why?

I grew up in Belleville and I know exactly where Staunton is--in fact, I drive right past it everytime I go down to visit my family (so keep an eye out for me on Tuesday night around 10:00 or so when I drive along I-55 right past your house). :D

 

(edit to add: I even dated a girl once who lived in Prairietown)

I'd be interested in any of the stews. I would also be interested in any of the soups like say a navy been with ham or anything really. My mother was a great cook. Never measured anything and never really had anything written down. :D I sort of follow in her tracks but I never make anything the same twice. I am always trying to make it better.

Uh....DON'T SERVE SOUP!!!!!

 

:D Get the grill out, take some ribs or pork shoulder or brisket and serve a big pile of MEAT!!!! Add some BBQ beans and cook like a man. Top it all off with cold beer. Argggh..... :bash:

What?? I was assuming the soup was the first course followed by lots of grilled animals. Then the beer course(s). :clap:

Chief my good man, I just moved across town of the same small town I have lived in for 26 years. I have grilled just about everything from the rooter to the tooter for these fellas. Sorry I wasn't more clear about it. :D After a full summer of nothin' but grillin' and chilliln' it is kinda nice throw together some soup on a cold day for football.
