Bier Meister
4 russets (peeled and cut into 6ths-rough cut) 4 oz butter (softened or melted entirely) 1/2 - 1 C cream s&p to taste add about 2 qts of salted water to a pot. peel and chop potatoes 1 at a time and place in water. bring to a boil. iook for about 1 hout to 74 min until they are very soft. i like using a food mill to mash the potatoes into a bowl.... add butter, cream.... mix well.... add s&p ..... mix well.. i cannot tell you how many variations of mashed potatoes i've done. a couple of my favorites: - chive - wasabi/ginger - chipotle/cheddar - goat cheese - blue cheese - porccini - portabello/rosemary - beet - saffron - maple (1/2 potatoes are sweet potatoes) serves about 4 Edited November 20, 2006 by Bier Meister

Skippy
I read these things all the time and I almost always steal and idea or two but I have got to tell you that I don't have a Oprahing clue what that food mill is. It is a tool though and just because of that I think I will buy one.

Decided that I would try to find my own this year. Good luck finding them in any of the major big box stores.
