My wife's step dad is from Ireland.. ie, born and raised and lived there for 60 years before marrying my wife's mom and moving out to the States. He is a HUGH mashed tater fan.... wonder why. Anyway, we are hosting Christmas Eve.. my MIL hosting Christmas day. She is doing cornish game hen. Anyway, it seems that whenever we have people over, we always do a beef dish. As mentioned in previous threads, my wife's dad is a meat broker, selling to many restaurants, so they were raised on good beef. SO, when given a choice, my wife loves to hae prime rib, ribs, steak, etc. My brother in law will eat it, but I know it is not his favorite. So, I was thinking that this time I would come up with a chicken dish that would go well with mashed potatoes, so, something hearty I would think ( of course, I really did not expect my MIL to do poultry, so I was caught off guard by that). So, while I may still chang my mind yet again and do a prime rib or something like that, I would really prefer to do a chicken dish (prefer boneless chicken breasts). I made a dish the other night, though it would not lend it self well to mashed potatoes, as it was more an Italian style dish (stuffed the chicken with sauce and jack cheese, then breaded it in Italian Bread crumbs, pan fired for a few minutes each side then baked in the oven.. came out good). So.... now that you have my entire Christmas story, please, any suggestions on chicken dishes, including accompanying sides, that lend themselves well to mashed potatoes. Also, it was my wife's step dad's birthday a few nights ago, but this will be the only time we have to get together, so we are also celebrating his bday, thus my desire to do mashed taters. Bier Meister Posted December 21, 2006 Share Posted December 21, 2006 you could do a cordon blue, marasla, kiev, saltimbocca, some other variations of the chicken you made. i always like a good sauce with my mahers..... so you could even keep it simple and go with a sauce. look for me on im and figure out what flavors you want. I was thinking something simple like breading the chicken, light fry and bake, mashed taters, doing up the chicken gravy (packaged stuff as I am useless when trying to make gravy, and as I do not have the best of pots and pans, I don't trust their being good cracklin whatevers to scrape up to add flavor, then debating vegetable... thought brussel sprouts, but not everyone likes those. Bier Meister Posted December 21, 2006 Share Posted December 21, 2006 (edited) you can stuff the breast with some brie, dried cherries, thyme... or provolone, proscuitto, sage (then go with a sage sauce) or herbed butter do the 3 stage breading...sear all sides, bake. make a cherry, shallot cream sauce. asparagus, carrots.... cook them 50%( steaming/boiling) then can saute them in a little butter, salt and pepper... if you like garlic. or you could wilt some swiss chard or spinach.
