Kid Cid Posted March 9, 2007 Share Posted March 9, 2007 Just broke down and bought the 8 piece set. These are not designed for restaurants as they need to be immediately washed and dryed after use. Sitting around will cause staining. However, I find that teh handles are WAY more comfortable than the Henckles that I previously had. Also, I was able to put an edge on these unlike anything the Henckles could ever take. Plus, I've always loved the look of Damascus steel. They seem very pricey until you realize that other comparable knives (Shin) are almost double the cost. I've only had them for about a week and they seem to be holding up very well; we'll see how they hold up over time. Quote Link to comment Share on other sites More sharing options...
Bier Meister Posted March 9, 2007 Share Posted March 9, 2007 (edited) katana i haven't tried them...handles look interesting. how are you sharpening your knives? i haven't had any problems using a tri-stone on my henckels twin select...... seems like i need to sharpen about as frequently as my co-workers with other knives. I use a ceramic rod for sharpening. You have to understand my wife also uses these knives. The entire concept of a sharp knife is an anathema to her.
