Donny Kerabatsos
I tried this recipe the other night. simply amazing. Submerge 4 pound corned beef brisket in water and simmer, covered, for 3.5 hours. Include seasoning pack. Whisk together: ¼ cup ketchup ¼ cup Jack Daniels Whiskey ¼ cup apple cider vinegar 2 T. Brown Sugar 2 T Soy Sauce 1 t. Dry Mustard ½ t. ground ginger ¼ t red pepper flakes Preheat oven to 450, line baking sheet with foil, top with a rack (cookie rack will do) and coat with non-stick spray. Transfer cooked beef to rack, fat side up. Use knife to trim fat. Will come off easy. Boil the above ingredients on high for 4 minutes or until the glaze is sticky. Spoon the glaze on the beef, and roast for 15 minutes. Let beef rest for 15 minutes. Cut thin slices against the grain and enjoy. You can make the dressing from scratch, but if you have it available in your area and you want to be quick, Marzetti's slaw dressing is hard to beat.
