Colcannon This is a great dish for St Patty's day leftovers. Leftover boiled potatos Leftover cooked cabbage Onions butter sour cream heavy cream shallots (optional) Sautee some onions (in plenty of butter) that have been sliced into approximate 1/4" slices, and cut to about 1" lengths. Mash the leftover boiled potatos, and add to the pan with the onions after they have softened. Cut the cabbage into 1" squares, and add that to the fryin pan, and mix. I'm not including quantities here, as leftovers are hard to predict. Add a sensible amount of butter to the pan. Add one tablespoon of sour cream per 1/2 cup of what's in the pan. Add one teaspoon of heavy cream per 1/2 cup of what's in the pan. Heat thoroughly. S&P to taste. Serve with reheated corned beef and Irish soda bread.
