With the above, I also chuck in a little spicy paprika, & I like a pinch of sugar, or a teaspoon of tomato paste for a hint of sweetness. If you want a great taco made from beef, take some flank steak (hanger steak better still if you can find it) and marinate it with coca-cola, salt, and ground dried chilis. Pretty basic. for "tacos" i use a similar blend (no coriander, use a little cinnamon and cocoa powder). i hardly ever make these. i'll marinate and grill steak (flank or skirt) and dice it.
