Big Country Posted May 20, 2007 Share Posted May 20, 2007 I've got a couple big bags of the raw unsalted almonds and walnuts (one bag of each) and I'm looking for good ways to make use of them other than as a healthy snack. I'm not a big fan of using them in salads, though I know they go well with some mixes for salads. I was thinking maybe chopping them and using them as a breading of sorts for chicken or steak, just not sure what they would mix well with in terms of main dish, side dishes, other seasoning and application. Hugh B Tool Posted May 20, 2007 Share Posted May 20, 2007 Slivered almonds with steamed fresh cut green beans. Crushed almond and panko encrusted fish. My favorite for this is fresh trout or cabazon. Banana bread w/walnuts. Waldorf salad. Crushed almond and parmesan encrusted chicken. Just off the top of my hung over head. More later as the haze clears..... Muggsy Posted May 20, 2007 Share Posted May 20, 2007 grilled grouper with almond butter use: 1/2 cup (1 stick) unsalted butter, softened 4 ounces almonds, crushed 2 teaspoons parsley, diced Splash of almond extract Grouper Mix all ingredients (except for grouper) together. Shape into a roll, wrap in waxed paper, and chill. Season grouper with oil, salt and pepper and grill for 3 1/2 minutes. Flip grouper and continue grilled for 3 1/2 minutes. I've never heard of a baklava recipe with that many nuts in it. This would probably be great to take to a large get together. It must make enough for a party.
