Bier Meister Posted June 18, 2007 Share Posted June 18, 2007 (edited) one way to go....... 1 tablespoon olive oil 1 cup onion, finely diced 6 canned anchovy fillets, drained, minced 5-6 large garlic cloves, minced 1/2 teaspoon dried crushed red pepper 2 14 1/2-ounce cans Italian-style diced tomatoes 4 6 1/2-ounce cans chopped clams (strain and save 1/2 juice) 1 cup dry red wine 3 tablespoons tomato paste 1 pound linguine, freshly cooked Chopped fresh parsley Grated Parmesan cheese (optional) heat oil in heavy large pot over medium-high heat. add onion and sauté 3 minutes (sweat them). add anchovies, garlic and dried red pepper; sauté 2 minutes. mix in tomatoes with juices, clam juice, wine and tomato paste. bring sauce to boil. Reduce about 20-25%. add clams reduce heat to medium-low and simmer until slightly thickened, stirring occasionally, about 5 minutes. Add linguine to sauce and toss to coat. Season with salt and pepper. Transfer to large bowl. Sprinkle with parsley. The good thing was ( and I know we've all been there before) it absolutlely hit the spot. #1 it's what I was craving and #2 I wanted to whip it together myself.......needless to say, it will be done again. Can we get a poll going on white vs. red clam sauce? I find in red clam sauce, the clams get overpowered by the tomato flavor. White is all about the clam juice being the base of the flavor.
