Crock Pot Chicken

My favorite dish at home lately has been throwing some frozen (boneless skinless) chicken breasts into the croc pot, with a few cans of chicken broth, and a packet of dried italian dressing mix... we let it cook all day, then serve it over egg noodles (pouring some of the cooking juices over the noodles as well), and then topping the whole thing off with some grated parmesian. The ckicken gets so amazingly tender and flavorful in the croc pot! I've been enjoying it with a chilled Pinot Grigio.

Ah, what the hell-From the Crock Pot has to have a TC to I reckon.

 

This is quick and is a decent feed.

 

Chicken Mozambique

 

2 1/2 lbs boneless skinless chicken breast

1 cup white wine

1 stick butter, cut into small pieces

1 small onion, chopped

2 tablespoons minced garlic

2 tablespoons lemon juice

2 tablespoons hot pepper sauce

1 teaspoon salt

3 to 4 cups hot cooked rice

 

Step 1-Place all ingredients in CP except rice, cover, and cook low 8hrs/ high 6 hrs

 

Step 2-last 30 minutes of CP cooking time-prepare rice seperatley on stove top to serve chicken over

Here's what we did last night...

 

2lbs boneless skinless breasts

1 can black beans

2 cans corn

2 cans tomatoes (mexican flavored with onions and chiles) OR salsa

 

threw it together and cooked it for hours...served over rice...very simple and pretty good...
