PantherDave Posted September 27, 2007 Share Posted September 27, 2007 (edited) Well this week we will be doing a very hearty soup.....so "If ya Like Soup", then this one's for you!! Northwest Beef and Vegetable Soup 2 tablespoons olive oil 1 to 1 1/2 lb lean stew beef, fat removed and cut into 1" cubes(I use top sirloin myself) 1 med onion, chopped 1 clove garlic, minced 3 1/2 cups canned crushed tomatoes 1 can ( 15 oz) white beans, drained and rinsed 1 buttercup squash, peeled and diced 1 turnip, peeled and diced 1 large potato, peeled and diced 2 stalks celery, sliced 2 tablespoons minced fresh basil 1 1/2 teaspoons salt 1 teaspoon black pepper 8-10 cups water( i usually use 9 cups) Step 1- Heat oil in skillet over med heat until hot. Sear beef an all sides, turning as it browns. Add onion and garlic during last few minutes of searing. Transfer to CP. Step 2- Add remaining ingredients. Gently stir well to combine. Cover and cook on High for 2 hours. Turn CP to Low and cook 4-6 hours longer. Stir occasionally and adjust seasonings to taste. Now for some Football- I like the Panthers to take control of the NFCS with a nice home victory regardless of who is the QB. Cat's roll up the Bucs in Charlotte.
