jaxfactor
If you have never tried it you need to. It is unquestionably the greatest chili mix in the world. +1 I use nothing but. The only thing is they need to add a bit bigger bag of ceyenne pepper for the people who like their chilihot and spicy. I'm not one for very hot stuff but adding the small bag included is pretty tame to even myself. But to me it's perfect.
Rovers
In particular, the mesa flour is unique as far as I know, and does much more than thicken the chili, it imparts a very nice flavor that no ther flour I've ever used does. Anyone know where else one can procure this stuff? As far as the cayenne pepper packet goes.... man, the stuff is cheap, and you can add as much as you would ever possibly want. I recently made a batch (using a from scratch recipe) and used a new chili powder. I used to dump an entire jar of the stuff McCormick sells.... no heat at all. Well, this new chili powder was so freakin hot I had to double the batch size just to make it edible... BLAZING hot! Don't need any cayenne powder with this stuff, it's awsome. Comes in a BIG plastic jar, 5 times the size of a McCormack's jar, and costs almost exactly the same price, called "Mr Best". This company is great.... the dried dill is 10% of what the national spice distributors charge. Unfortunatly, it seems to be a small regional distributor, but I am sure there are other equally cheap companies around that sell quality spices just as inexpensively if one takes the time to look for them. But I sure would like to get some of Shelby's mesa flour.... there isn't anything like it.

Rovers
Where do you get it? A supermarket chain on Long Island, King Kullen, which is also the boggest chain here, only carries it in some stores, not all. Go figure. It is the best chili mix, I agree. Comes in a little brown bag, looks like a snadwich bag for lunch. Red, white and black label. PS: Is that mesa flour just regular old corn flour? Big Country
I like to use ancho chile powder when I make up some chili as oppossed to regular chili powder. Adds a nice smokiness and a great kick... and some good color to the chili. I'm gonna have to make up a batch soon, if it would ever stop getting a bit colder around here. Chili and corn bread..... yumm
