rajncajn Posted October 15, 2007 Share Posted October 15, 2007 (edited) I've got a couple of packs of ground beef in the freezer & I'm looking for something tasty that doesn't come from a package that says "Hamburger Helper." But it has to be something that I can fix quickly as the Wife is very impatient with me in the kitchen. Bier Meister Posted October 15, 2007 Share Posted October 15, 2007 Meatballs: 4 large eggs 1/2 cup fresh French breadcrumbs (or not ) 6 tablespoons grated Parmesan cheese 3 tablespoons olive oil 1/4 cup chopped fresh parsley 3 large garlic cloves, minced 2 teaspoons salt 1 teaspoon ground black pepper 2 pounds lean ground beef Stir eggs, breadcrumbs, Parmesan cheese, 3 tablespoons olive oil, parsley, garlic, 2 teaspoons salt and pepper in large bowl to blend. Add ground beef and mix thoroughly. Form mixture into 1 1/2-inch diameter meatballs. Pour enough oil into heavy large skillet to coat bottom; heat over medium-low heat. Working in batches, add meatballs and fry until brown and cooked through, turning frequently and adding more oil as needed, about 15 minutes per batch. Transfer to plate. can go more italian and use marinara, or a little more nordic: 2 tablespoons all purpose flour 1 1/3 cups beef stock or canned beef broth 2 tablespoons whipping cream Ground allspice Add flour to drippings in skillet and stir over medium heat until brown, about 4 minutes. Gradually whisk in stock and cream. Simmer until sauce is thick and smooth, stirring frequently, about 5 minutes. Season to taste with allspice, salt and pepper. Pour sauce over meatballs and serve. i do this one over egg noodles. i have added different ingredients/spices in the meatballs and the sauces (ie: finely diced onion, pepper, thyme, oregano, basil, etc).... you might want to delete the allspice...crisped diced bacon is nice in there as are sauted, sliced mushrooms. Chavez Posted October 15, 2007 Share Posted October 15, 2007 I do a trailer-park version of nachos supreme - just season up the beef with garlic and onion (or garlic and onion salt for the true white trash feel) and pepper spice to taste; dice up whatever veggies you desire - onion, tomato, green/red peppers; take a can of Campbell's cheese soup and heat. Take some nacho chips, put a layer in a big bowl, put some beef, veggies, and cheese on top, and repeat until bowl is heaping full. Then you plunk it in the middle of the table and go nuts. Feel free to season with seasoning salt, pepper, garlic salt.. whatever you like. While this is going on, prepare your favorite type of Mac n Cheese, either from a box or you can make it "fresh" from a recipe Once the Mac n Cheese is made, add in the ground beef and mix up. Round here, you take raw ground beef, mix in onion and peppers, and eat it on crackers - it's called either raw dog or cannibal sandwiches. I don't quite get the appeal. alexgaddis Posted October 18, 2007 Share Posted October 18, 2007 One of my favorite recipes with Ground Beef Brown ground beef and diced onion, drain, mix in 1 can Cambells tomato soup...meanwhile, boil 7 oz.'s of elbow mac. and drain.
