PantherDave Posted October 25, 2007 Share Posted October 25, 2007 As promised....the Beef is Back this week, as we will be crocking a pot roast. So, here we go............................ Better Than Mom's Pot Roast 4-5 lb beef bottom round or rump roast 1Tbsp olive or canola oil 2 cups beef broth 2 cups ketchup 1/2 cup cider vinegar 2 med onions, chopped 2 cloves garlic, minced 6 Tbsp brown sugar 5 carrots, chopped 5 stalks celery, chopped Step 1- Rub roast with oil. Brown under broiler on both sides. Step 2- Combine broth, ketchup, vinegar, onions, garlic, and brown sugar in CP. Add roast, carrots and celery. Step 3- Cover and cook on low 8 hrs, until meat is tender. Slice roast and serve with veggies and sauce from CP We always do mashed taters with this one...some warm yeast rolls with some honey butter, and I like a tall cold glass of milk with this one. Now for some football....yep, trap game, as the Panthers take down the Colts via John Kasay's foot. Colts 24 Panthers 26 Bon Appetite and Good Luck on the Homer Front and FF Wise-Peace PD. Not sure if the flavor cooks out and you gotta compensate by seasoning at the end. Anyways, I trust your taste and I'm thinking of trying this or the ribs you have another thread on.
