All of these are quite easy (though collectively would take more than 15 minutes). Keep it simple and just do better versions of the routine stuff.

 

Vegetable platter:

Instead of the usual sour-cream, make a few interesting one.

Peanut sauce- You can make a suitable version of Asian peanut sauce by mixing a can of coconut milk with about the same amount of peanut butter, a bit of brown sugar, and soy sauce and vietnamese chili/garlic paste to taste.

Curried yogurt- Pretty simple, plain yogurt, curry powder and salt to taste.

 

The biggest difference between a good veggie platter and the crap you usually find is how you treat the veggies. Raw broccoli, cauliflower, and zucchini just plain suck. Blanch the broccoli and cauli briefly in boiling salted water and remove to a bowl of ice water to shock. For the zukes, cut them into spears and just toss them with a bit of salt for 30 minutes before lightly rinsing. The salt will sort of "cook" them.

 

The rest; peppers, cherry tomatoes, english cukes... they just need to be cut (or not in the case of the tomatoes) into nice chunks.

 

Warm goat cheese with bread/crackers

Really simple. To one 10 oz log of goat cheese (Costco?), add the grated zest and juice of one lemon, some chopped parsley or chives (unless you find an herbed log of cheese), a bit of honey, olive oil, and salt and pepper to taste. mix well and put into a ramekin. Toss in the over for a few minutes before serving

 

Guacamole. Who doesn't like that?

Here's one that is crazy simple. If you've got a costco, find the vacuum packed mashed avocado (sometimes it's seasoned and called guacamole). Dump it all in a bowl, take a small jar or can of salsa verde (herdez is a good brand), chop up some red onions and cilantro and you're done. This will take you 5 minutes max.

 

Those are a few really simple ones off the top of my head.

You could do some simple stuffed mushrooms. Those can be made up ahead of time and just popped in the oven when guests arrive.

 

The recipe:

 

1 cup italian-styl dried bread crumbs

1 cup grated pecorino romano

4 garlic cloves - minced

4 tablespoons chopped fresh italian parsley leaves

2 tablespoon chopped fresh basil

salt and freshly ground pepper

1/3 to 1/2 cup extra virgin olive oil

28 large white mushrooms, stemmed

 

Stir bread crumbs, romano chees, garlic, parsley basil, salt, pepper (to taste) and about 3 tablespoons olive oil in a medium bowl to blend.

 

Drizzle a large baking sheet with about 1 tablespoon olive oil to coat. Spoon filling into mushroom cavities and arrange cavity side up. Drizzle remaining olive oil over filling in each mushroom. Bake until mushrooms are tender and filling is heated through and golden, about 25 minutes (In a 400 degree oven).

 

These be yummy and easy to eat.
