Pierogies

Mrs. Egret grew up in a traditional Polish house. She loves Polish food. I've made golumpki, soup, potato pancakes, and lots of other mushy foods. I made city chicken (mock chicken) for dinner tonight. She said that it was better than her grandma's. I asked if she wanted me to try making pierogies. She said no. I took that as a challenge. :D

 

Anyone ever tackle making these?

Unfortunately she knows the difference. She grew up in Hamtramck, which is a Polish city inside the city of Detroit. If you've ever seen the movie "Polish Wedding", that's her church.

 

I found a few guides online. It doesn't look hard, but sometimes that's not good.

My Mom made the best and my Bro copied her recipe. His mushroom ones are great. I don't think they are hard, just tedious....like making a bunch of mini-pies. Not sure if the recipe is written down, but if you want I'll ask my bro to pass it on. Let me know.

Sent my Bro an email a few minutes ago. I'll talk to my Mom, but she's famous for memorizing everything, that is no recipes written down. :D

Something to whet your appetite.....(a reply from my Bro):

"Along with my recipe for the basic pierogi dough, I'll send my recipes for the most important component - the fillings. I make the traditional Sauerkraut, a modified traditional mashed potato (ours - Anne helped me develop this one - has onions and cheese), a not traditional but should be Mushroom, and a definitely not traditional, but one of our favorites that Anne perfected Spiced peach.

 

The essential piece of equipment for the dough is a pasta machine or a large bread board, a rolling pin, and a lotta elbow grease. I'll include this reference with my recipe. "

I've made them with my wife, also from a traditional Polish household. She makes three types of fillings: cabbage, potato and cheese. The biggest portion is making the dough. We use a simple water glass to cut the dough. Make sure that you don't let the dough dry out, it becomes a bitch to work with. Get a marble rolling pin, it makes the work easier.

FWIW....Polack that I am (50% Polack, 25% German, and 25% Belgium....PolGermBel?), I never liked the potato/dessert types. I have to admit that my Bro's tater ones are great! But I still think that the sauerkraut and mushroom ones are unreal! Lightly fried w/ bread crumbs....Yummmmm!

+1. However, there's a guy in my wife's school who makes some kickass pierogies. And boy does he have an insane variety of them. :D They're awesome though!!

Sorry Mrs. T's is grade A dog food compared to homemade. But then again any port in a storm! All that frozen crap is soggy and doughy!

Only if you go straight from the boiling water to the plate. Finish 'em off in a frying pan with a little brown butter and/or oil and crisp them up a little on the outside. C'mon man. . .put a little perfume on that pig!!

I got the recipe. I'll be giving it a try on Sunday. I'll let you know how my first try works out.

1 hint for the dough.....use ice cold water or milk to make the dough. its makes it easier to work with and it doesnt shrink as much.

 

I always thought cold water was the #1 cause of shrinkage. . . :D

I can FedEx you some of the best in the world that are made at a Polish church on the South Side of Pittsburgh every Thursday. I kid you not, these things would make you spit any Mrs T's out and might have you make a trip to Pittsburgh just to get some.
