I've made golumpki, soup, potato pancakes, and lots of other mushy foods. I made city chicken (mock chicken) for dinner tonight. She said that it was better than her grandma's. She grew up in Hamtramck, which is a Polish city inside the city of Detroit. If you've ever seen the movie "Polish Wedding", that's her church. I found a few guides online. I don't think they are hard, just tedious....like making a bunch of mini-pies. Not sure if the recipe is written down, but if you want I'll ask my bro to pass it on. Let me know. I make the traditional Sauerkraut, a modified traditional mashed potato (ours - Anne helped me develop this one - has onions and cheese), a not traditional but should be Mushroom, and a definitely not traditional, but one of our favorites that Anne perfected Spiced peach. The essential piece of equipment for the dough is a pasta machine or a large bread board, a rolling pin, and a lotta elbow grease. I'll include this reference with my recipe. " Anne is my niece. Kid Cid Posted December 17, 2007 Share Posted December 17, 2007 I've made them with my wife, also from a traditional Polish household. She makes three types of fillings: cabbage, potato and cheese. The biggest portion is making the dough. We use a simple water glass to cut the dough. Make sure that you don't let the dough dry out, it becomes a bitch to work with. FWIW....Polack that I am (50% Polack, 25% German, and 25% Belgium....PolGermBel?), I never liked the potato/dessert types. I have to admit that my Bro's tater ones are great!
