theprofessor
We are hosting a New Years Eve Party this year and looking at having around 40 people attending. I am sending out invitations today and would like some recommendations on the food. I am thinking of getting 3 chafing pans and having them for the 3 main Appetizers. I will be able to keep the food warm throughout the night because there will be people streaming in and out throughout a 4 hour period of time. I have asked 5-6 friends that I know are going to attend to bring appetizers or desserts. I need suggestions for the 3 main appetizers for the chafing pans. I want something that's farly easy (Meatballs, chicken wings, etc.) but I want the best food possible. I was thinking of going to Costco to get the meatballs, chicken, etc that I want but if I do this I want to accompany them with some great sauces. Does anyone have any great sauces or suggestions on what I can do to make these 3 main dishes a hit? Thanks!
Chief Dick
The Costco idea is perfect. Done that many times, and considering you are going to have some drunk humans over there it's perfect. Can't help you with the sauces though.
sundaynfl
Since you are going to Costco look for their Rasberry Chipolte Sauce. Take some steak and or chicken and slice it thin and marinate in the sauce overnight.... place on skewers and grill it up!! I usually do this with elk and everyone raves about it... cheers!! theprofessor
Thanks Guys! I don't want to have to barbeque. Just cook, add sauce and into the warming dishes.
Pope Flick
My step mom served at a holiday party last night bacon wrapped pineapple chunks or water chestnuts with a plum sauce. Wrap the shiznit up using skewers bake it in an oven on a rack to drip grease of. Serve with warm plum sauce, and get out of the way of the stampede. Good stuff, and looked super easy. rhippens
while not the always 100 percent popular, our families tradition along with many others because it's thought to be good luck, is pork and sauerkraut. if you wanted to go easy, this definitely fits into the mix. cube up some pork roast, throw it in the crock pot, throw in a can or two of beer or coke, let it go all day, shred it when you're ready. as far as the kraut goes, have another small crock going or just heat some up in a pan, most won't know the difference between canned kraut and authentic. throw on a bun or plate, and it's pretty tasty. Bier Meister
bacon wrapped scallops w/ balsamic reduction misc pinwheels (ie: roast beef with herbed cream cheese) mini reubens bruschetta (i like doing a trio- traditional tom/basil, marsala, garlic/caper) crumbled blue cheese w/ carmelized onions over sliced baguette (can also use sliced pears with that) mini crab cakes (choose you accent and provide a dipping sauce for em) kabobs
gbpfan1231
Bacon wrapped cream cheesae stuffed jalapeno peppers. I posted the recipe on here a while back. They are very easy and are usually an absolute hit.
