polksalet Posted January 23, 2008 Share Posted January 23, 2008 Buy a reasonably fresh, high quality brisket. Make a solution of 2 pats water 1 part vinegar. Wash the brisket extensively with the solution. The vinegar helps kill any bacteria and Sonny believed it helped hols the "flavor" inside. Cook the brisket fat side up with pure hickory. Don't jack with it by applying any rubs or seasonings or nothing. Just let the thing cook.for about 10 hours of until you can jab a fork in the side and it stars to come apart. There you go, the recipe for the greatest brisket in the world. The recipe has not changed in 100 years. I am going to modify my pit but putting some plate iron under the meat to allow the juice to splatter on and rehydrate the meat but I don't know if sSonny would have approved.
