Marinating yellowfin tuna

Hey foodies, I bought some very nice looking yellowfin tuna yesterday and was wondering how long to marinate. I don't want to over saturate the fish but would still like to have some of the marinade flavor.

You've got quite a range for yellowfin. If' you'll just be grilling the fish, anything as simple as a little sesame oil and crushed sea salt / black pepper should work. You can also go almost to the point of making Ahi Poke...sesame oil, lime, soy, onion, toasted sesame seeds...

don't get me wrong..... i love doing tartares, pokes, ceviches, etc....... just like grilling/sauteing fish a little more basic and letting the accompaniments bring other flavors to it.

 

 

what did you end up doing? ie: i could envision drizzling it with basil oil, s&p...grill ....... then topping it with some form of tomato/garlic relish.

to be honest, i don't marinate the fish i cook. i go very simple (infused oils, salt, pepper) , but use sauces and glazes to enhance flavor.

I may with stronger flavored fish but when I get a hold of "really nice" tuna, it's all I can do not to just slice it up and eat it raw, let alone do anything more than grill it with salt and pepper and serve it with a very clean sauce.

Used sea salt, some fresh basil, and some black pepper. Turned out very nice. Seared it a bit just for color(det you would have been proud). Being in the small town midwest I rarely travel to get cuts of fish/meat like this. WOW!!!! Had a little jam session with some friends afterward with a glass of vino and it was a GREAT evening!
