If' you'll just be grilling the fish, anything as simple as a little sesame oil and crushed sea salt / black pepper should work. Thanks again for your expertiece! don't get me wrong..... i love doing tartares, pokes, ceviches, etc....... just like grilling/sauteing fish a little more basic and letting the accompaniments bring other flavors to it. what did you end up doing? ie: i could envision drizzling it with basil oil, s&p...grill ....... then topping it with some form of tomato/garlic relish. Used sea salt, some fresh basil, and some black pepper. Turned out very nice. Seared it a bit just for color(det you would have been proud). Being in the small town midwest I rarely travel to get cuts of fish/meat like this. WOW!!!! Had a little jam session with some friends afterward with a glass of vino and it was a GREAT evening!
