I was at the store a few days ago and saw that pork shoulder was cheap (.80/pound). Bought one and gave Pernil a shot at home. Made a mixture of crushed garlic (about 10 cloves), cumin, oregano, olive oil, adobo and pepper. I tried to use one of those giant syringe injectors to get the mixture into the meat and of course broke the syringe. So I took a fish knife and made a bunch of deep incisions and used the handle of a wooden spoon to shove the stuff into the holes. Rubbed the rest of the spice on the outside, put it in a dutch oven with a wire rack on the bottom to keep it out of the drippings and cooked it at 300 degrees, covered, for about 6 hours.

It came out pretty good. . .not infused with that rich garlicy flavor that the places in Spanish Harlem can get, but it was pretty flavorful. And most importantly, it was falling off the bone and really tender. Served it with rice and beans and some hot sauce on the side. Yummy.
