Savage Beatings Posted February 12, 2008 Share Posted February 12, 2008 I'm also looking for some new knives, but in addition, I realized recently that I need a good spatula. Don't laugh... I'm being serious, and I just don't know if there are any real quality differences that I need to be aware of. My issue is that when I am cooking eggs, I try to flip them over with my big bulky plastic spatulas, and the egg sticks to them and they don't flip over correctly. Then just the other day, I saw someone on tv using a flat metal spatula, and they flipped an egg over perfectly. So, I think that's what I need. Any recommendations? I also don't like non-stick coatings because I can't use metal utensils. I went with the Calphalon One series of cookware for that reason. Everytime I go to flip the egg over, the half-cooked egg white sticks to the spatula which ruins my attempt to flip it. What am I doing wrong? Non-sticks do lose their coating after a while...or if you're using a metal spat on them you're probably scraping the teflon off each time you use it. Never use metal on non-stick surfaces. At least that's what I've been told. If your non-stick pan is over 3 years old then you should probably replace it or just PAM the crap out of it each time you use it. ETA: You may just not be cooking the egg long enough. I cook all my eggs on medium heat and whenever I flip them they're fine. I just saw someone using one on tv, and they were flipping eggs like a rock star... so I thought that was the way to go. PaulOttCarruth Posted February 12, 2008 Share Posted February 12, 2008 The easy solution to your egg flipping conundrum is don't flip the eggs. If you're going for over-easy, just put a cover over the pan for a few minutes. The trapped heat will cook the yolk slightly and acheive the same effect as flipping.
