In the long drop to the bottom, the egg is supposed to form a nice smooth teardrop shape. By deep I meant around 8 inches I guess. Eggs BenedictA traditional benedict with two poached eggs over Canadian bacon and a toasted English muffin. Served with Hollandaise and potatoes. Smoked Salmon Benedict Two poached eggs with Norwegian smoked salmon and a toasted English muffin. Served with Hollandaise, asparagus spears and potatoes. Avocado Benedict Two poached eggs over sliced avocado and tomatoes on an English muffin. Served with Hollandaise and potatoes. Florentine Benedict Two poached eggs served over spinach Florentine and a toasted English muffin with potatoes and Hollandaise. Crab Benedict Two poached eggs with Alaskan crab on an English muffin. Served with potatoes, asparagus spears and Hollandaise. i've had the crab and florentine, and they were good, but the traditional is still the best IMO. Local place here does the traditional essg benedict and also a southern benedict (I think thats what they call it) which is essentially biscuit, sauaage, the eggs and country gravy. Remove the bacon and your pan will have nature's all natural best tasting egg fryin' fat right there in the skillet. Crack them eggs into that fat then gently use the hot juices to cook the yolk by flipping the grease onto the yolk with yer flipper. No turning the egg at all. Remove egg when it reaches yer specifications. Best eggs benedict I ever had was at TP Crockmeier's in Mobile, AL. Every Sunday brunch. Served with champaign/strawberries. Bacon is one of nature's perfect foods. Chili's now has their new smokehouse burgers (I think that is what they call them). I had the bacon cheddar one. This is the thickest slice of bacon I have ever had, and it is delicious. They do a light chili rub on the bacon. Mmmmmmmmmmm. I may have to go there for dinner now......
