SheikYerbuti Posted February 28, 2008 Share Posted February 28, 2008 So, I'm watching this show on the Food Network, and it's a steak contest. . .the contestants are applying complex spice rubs and all kinds of marinades and meat tenderizers. I can't watch. . . well... i guess there is nothing wrong with finding out who can put out the tastiest steak. i would be interested in what methods turned out best..... marinate for 4+ hours then grill vs. a rub applied and cooked longer at a lower temp, etc. i could justify "poking" the steaks if you are marinating them... SheikYerbuti Posted February 28, 2008 Author Share Posted February 28, 2008 My local hang is the Borgata casino. They have 2 steak houses: Old Homestead and Bobby Flay. Flay typically uses a southwest rub on his steaks and offers lots of different sauces and toppings. Last time I went I got his "Phily Cheesesteak" which was a NY strip served over a provolone based sauce with caramelized onions. It was good, but gimmicky. Old Homestead, on the other hand, gets the best pieces of meat and cooks them right, served only with a little au jus poured over the top. I think it's the best steakhouse in the state. Bier Meister Posted February 28, 2008 Share Posted February 28, 2008 if the flavors are good, i can enjoy a steak with seasoning, marinades, or sauces equallity, if not moreso, than good ole oil, salt, pepper. for me those flavors have to enhance the flavor of the meat, not eclipse it.
