In fact, I've found that it compromises the structural integrity of the burger. The lettuce on a burger is where things start to slide around on the bun, and channel sauces away from the burger, and make things less manageable on the whole. My order at In-N-Out: (1) double double, animal style, no lettuce. (1) double double, ketchup, mustard, onion, only (1) drink The two different burger styles are the result of years of dining there and needing to mix it up. Alternate orders that rock: "four by four", animal style, no lettuce - That's 4 all beef patties and 4 slices of cheese on one bun. Definitely helps to go no lettuce on this bad boy. Can also be ordered as "three by three" *cough* wuss *cough* Animal style fries - "Animal style" is essentially tiny fried onions and cheese. Getting that over an order of fries should be illegal. My favorite restaurant burger here in L.A. is at Astro Burger: Double cheeseburger, no lettuce. Coupled with onion rings and a Pineapple shake, it's perfection. Nothing fancy, but the flavor is righteous. Cheddar L&T Ketchup and mustard A little mayo on the bottom (toasted) bun to stop waterlogging (thank you Alton Brown for that gem) Bacon burgers are great too, but the whole meat on meat thing makes me feel a little guilty, so I usually don't do it. I've made burgers stuffed with grated cheddar, little black olive bits, and a pinch of chili powder before and they were good. It was just kind of a pain for little reward. That kind of stuff can be put on afterwards without the trouble. Although... putting bacon in the middle would probably have a bigger impact than what I used... I'm not sure what it is but it even seems different when you are making the patties. None the less, I was cooking some up and was actually fooled by them because they still felt pretty soft to the touch (read: still quite rare) and I actually cooked them longer than I usually would.
