Eggplant

My uncle got this recipe from Galatoires Rest. in New Orleans years ago--didn't ask how he got it though

 

Crabmeat and Shrimp stuffed Eggplants--makes four

2-1-1/4-lb eggplants

1-T of olive oil

4- T -butter

1cup onions or shallots

1/2 cup chopped celery-1/2 cup green pepper

3-t parsley

1-T minced garlic

1-t each oregano, basil, marjoram

1/2 cup whipping cream

1 egg

flavor your choice-either soy sauce or worcestershire work-1t of either

1/2 cup grated parm-and either 1/2 cup of seasoned bread crumbs or 14 saltines

1# of aroud 33-36 shrimp

1# of lumb crabmeat

lemon zest

 

oven preheat 350

slice eggplants in half--oil sided tray and place the eggplants skin side up on tray

should take around 30 minutes for meat to soften in eggplant--then remove insides keeping 1/4 inch intact around the eggplant making a boat to fill with the rest of the ingredients

in a skillet start saute onions(shallots), garlic, parsley, celery, green pepeer, herbs and shrimp in butter. Stri in lemon zest, breading, cream, egg

and sauce. Mix well

Add crabmeat and eggplant meat to pan. Stir mixing well. Now adding S & P to your taste--also can add cayenne or tabasco add this junction--now add your parmesan cheese last--mix well

Again lightly oil a shallow baking pan --probably the one you have used already

Spoon cooked mixture into eggplant boats

If you want to add more cheese on top so be it

Cook uncovered for 30 minutes

 

my daughter even puts spinach in with the eggplant--of course she then puts a caper tarter sauce on top like ketchup(oh well)
