a breading question

Some recipes, when breading something, call for dipping in flour, then egg, then bread crumbs. I've tried it both ways(flour before egg or no flour at all) with chicken breasts and eggplant and can't tell the difference. What gives?

 

 

it helps the breading stik to the produkt. also, it's a good to either season the produkt prior to applying to flour, or season your flour.
