Is it odd for me to sit in front of the grill, take in the aroma, and obsessively stare at the temperature gauge whilst sipping cold beers? Life is good. Kid Cid Posted April 21, 2008 Share Posted April 21, 2008 I had too much to do around the house this weekend (including making 10 gallons of beer) so I didn't get a chance to smoke anything. So while I'm working today, I put a pork shoulder in the smoker. I hit it with the Magic Dust before it went on. My mouth is watering just thinking about it. I've made fall off the bone ribs on this thing before (using CD's 2-1-1 method), so Could it just be a crappy pig? I'm edging ever to closer to pulling the smoker trigger... I dropped the subject. After weighing all my options, I actually decided against the Egg and went WSM. Not that I have anything against the Egg, but since I already had invested in a gas grill, I was really only interested in a smoker and the WSM is about the best in that regards. Its probably one of those things that forgiveness may be easier to obtain than permission, especially after a couple meals cooked on it. Saved $70 over retail price and $20 off of what Barbeques Galore (the only place I could find one locally) had them at by purchasing through Amazon. Arrived in two days. Even though the site is specific about the WSM, there's a ton of good info on smoking and barbeque lurking around there as well. My buddy does some very good barbeque with one of those Brinkman electric smokers but there's just something not right about doing barbeque without charcoal. With the WSM, the coals are easy but I've found that an empty wine bottle works well to fill the water pan. Some guys buy a Brinkman charcoal pan and replace the WSM water pan.
