The ribs are on. I've used Howboutthemboys' rub this time. Is it odd for me to sit in front of the grill, take in the aroma, and obsessively stare at the temperature gauge whilst sipping cold beers? Life is good.

 

No. That is EXACTLY what you are supposed to do. :wacko:

I had too much to do around the house this weekend (including making 10 gallons of beer) so I didn't get a chance to smoke anything. So while I'm working today, I put a pork shoulder in the smoker. I hit it with the Magic Dust before it went on. My mouth is watering just thinking about it.

Bad, very dissapointed. Don't get me wrong, I loved the rub and flavor, but they were tough. I've made fall off the bone ribs on this thing before (using CD's 2-1-1 method), so :wacko: Could it just be a crappy pig?

 

I'm edging ever to closer to pulling the smoker trigger...

I told my wife this weekend that I was going to invest in an egg. She told me she was going to invest in a new prada purse.

 

I dropped the subject. :wacko:

After weighing all my options, I actually decided against the Egg and went WSM. Not that I have anything against the Egg, but since I already had invested in a gas grill, I was really only interested in a smoker and the WSM is about the best in that regards. I just couldn't justify the expense of an Egg as a smoker only.

Its probably one of those things that forgiveness may be easier to obtain than permission, especially after a couple meals cooked on it.

 

When I get mine (which will be very soon), I think I'm going to try the "What? This old thing? I've had it for years".

Yup, that's the site I was going to send them to. Saved $70 over retail price and $20 off of what Barbeques Galore (the only place I could find one locally) had them at by purchasing through Amazon. Arrived in two days.

 

Even though the site is specific about the WSM, there's a ton of good info on smoking and barbeque lurking around there as well.

 

My buddy does some very good barbeque with one of those Brinkman electric smokers but there's just something not right about doing barbeque without charcoal.

Yesterday my wife told me we should step up to a real grill (have my old college roommate's lo-rent propane deal he never bothered to take with him).

 

I proposed the BGE and linked her to the website. She said "That looks good. Reasonably priced too."

 

I started in on the defense/justification/rationalization I had mentally prepared: "Well, now, you have to understand, it's both a grill AND a smoker, and what's more it's a really good--" she cut me off.

I have an electric and a charcoal Brinkman. I prefer the charcoal but I find it really difficult to add more water or coals to it.

With the WSM, the coals are easy but I've found that an empty wine bottle works well to fill the water pan. Some guys buy a Brinkman charcoal pan and replace the WSM water pan. Fits perfectly and holds about 3 times the amount of water.

Great idea and I certainly won't have any issues obtaining an empty wine bottle. :wacko:

Tried again last night for some neighbors. Used the same rub, but mopped every 45-60 minutes and kept the temp around 200. Much better, nice and moist and tender. THey all disappeared very quickly, along with copious suds :wacko:
