SheikYerbuti Posted July 5, 2008 Share Posted July 5, 2008 So we were planning on BBQ for the 4th, but came to the conclusion that grilling is exactly what "they" were expecting us to do. . .never one to play into their hands like a puppet on a string, we decided to do a 3 course fondue party instead. Man was it awesome. Course 1: 1/2 Sharp Cheddar, 1/2 Gruyere. . .shredded and tossed in a few tbsps of flour (thanks to the Melting Pot for that gem of a tip), then fondued with half a beer. For dipping: Apple chunks, baguette, broccoli florettes. Course 2: Court Bouillon of 1/2 chicken, 1/2 beef broth with a bouquet garni. Served: Chicken and cheese ravioli, Chorizo, chicken, mushroom caps, shrimp. For dipping sauces: Asian sweet chili sauce, BBQ, General Tso's, Marinara, and homemade Green Goddess. Green Goddess is a reason to live. Course 3: 1/2 semi-sweet chocolate, 1/2 milk chocolate with some heavy cream. For dipping: Ranier cherries, strawberries, rice krispy treats, banana slices. Do I feel like less of a god fearing, red blooded, flag waiving American? Yeah, maybe a little. Bier's is awesome: 1 1/2 C champagne or dry white wine 1 large shallot minced 7 oz grated gruyere 5 oz grated emmental 3 oz brie (remove rind, then cube) 4 tsp cornstarch 1 tbs lemon juice simmer champ and shallots for 2-3 min. remove from heat, add cheeses, stir. add cornstarch and lemon juice..... mix until smooth add mixture to pot. return to heat. it will melt and thicken (about 10-15 min). Selly's wife: 1 cup white wine 1-1/2 tablespoons butter 1 tablespoon all-purpose flour 2 cloves garlic (minced) 7 ounces Swiss cheese, cubed 7 ounces Sharp Cheddar, cubed 7 ounces Monterey Jack or Colby Jack, cubed 1. Bring wine to a boil in small saucepan 2. Melt butter in saucepan over medium low heat. Add garlic and cook for 1 minute. Wisk in flour for about 5 minutes, stirring constantly to avoid sticking and burning. Commentary: I add just a little extra butter when I make this becuase I have a gas stove so there's really no such thing as medium low for what you are oding here. 3. Once flour is cooked, stir in wine slowly, use a wisk to smooth the mixture. Slowly add cubes of cheese; stir until melted. Transfer fondue to pot. Both are absolutley delicious. I use Champagen with Bier's. Down here I have to plan ahead for Biers because the only place I can find the emmental is World Market, I think. If they have it at the deli in Albertson's or Kroger, the people who work there are not aware of it. People seem pretty impressed when you drop the fondue on them at a party, they probably think you are bisexual, but they loved the food. I bought an electric one for chocolate for desert. Correct, because of the two recipies above I own two fondue pots. If I could just figure out how they do their horseradish sauce at Simply Fondue, life would be pretty sweet. SheikYerbuti Posted July 5, 2008 Author Share Posted July 5, 2008 Follow-up: I saved the left over court bouillon, as well as the stems from the mushrooms, and about 7 left over mushroom caps. Strained the bouillon into a stock pot, simmered all the mushrooms in it for about 20 minutes, then hit it with the immersion blender until smooth, added a bit of cream, whipped up some home made croutons and it's maybe the best mushroom soup I've ever had! I have peculiar feelings about holidays and birthdays. . .I don't think the calendar should dictate when these things are celebrated. I don't like to buy presents for people when its their birthday, but rather when I find something that I think they'd like or when I have special reason to let them know that I appreciate them. Luckily for my future kids, Hannukkah is 8 days long. . .they're bound to do something that makes me proud if they have a full week to get the job done.
