Favorite spice per type of food

What kind of favorite seasoning do you typically use for certain types of food?

 

For instance, almost every type of pasta that I cook I use fresh basil for a spice. Pork chops I like to use rosemary.

 

What about the rest of you? Do you have a favorite way to season certain types of food?

Basil and garlic are the most versatile... but garlic generally isn't considered with the leafy herbs.

 

For pasta, it's basil and oregeno.

 

for Mexican, it's always cilantro, as well as Thai dishes.

 

Lamb, I use a canadian mint sauce, an English derivative, with fresh mint laeves... I laugh at chefs who serve mint jelly with lamb...

 

Saffron and rosemary is good with poultry.

 

Dill.... one of my faves, espeacially with fish. Goes great with sliced cukes, sour cream and garlic for a cooling summer salad.

 

Taragon... also versatile... goes good with mayo as a sandwich spread.

I try to use all different types to expand my flavor palette.

 

I really enjoy making seasoning rubs, but usually I end up mixing 5+ ingredients and just do it by feel that I never duplicate it. often utilize curry powder, onion powder, garlic powder, chili powder, celery salt, cumin, paprika, black pepper, salt etc. All depends on mood. Normally I use this type of thing with chicken breasts.

some of my favs-

Lamb - fresh ground Cumin and rosemary always works

Chicken - Curries, tandori or Garam Masala

Beef - garlic, Salt & Pepper

seafood - i keep it simple unless its shellfish (steamers) which i like to sauteé w/butter, garlic and wine
