Really Good and Really Healthy

Turkey and Sweet Potato Hash:

 

Grab some leftover white meat turkey, a large sweet potato and a couple yellow onions.

 

If you don't have it already, buy a package of hormel turkey pepperoni and someexpeller pressed coconut oil (healthiest fat to cook with) if you want to go lower fat, or can't find coconut oil, just use some PAM. (tastes fine that way)

 

 

Cook the sweet potato in the microwave after poking a few holes in it. If it is not soft after 5 min, try 3 more.

 

I use a cast iron skillet, get the oil/pam nice and hot. Add the diced onions, when they are cooked through, add diced turkey. once the turkey and the onions get to know each other add a handful of turkey peeperoni (17 slices only have 70 calories). After a couple minutes, add the cut up/mashed up sweet potato. Mix it all together, let it cook a while, stirring and scraping up off the bottom of the pan. Season tot aste with sea salt and white pepper.

grilled chicken (2-3 breasts)

napa cabbage

green onion - 3 or 4

cilantro - 1/4 cup or so

 

Dressing:

1 lime - zest and use juice

peanut oil or evoo - 3-6 tbsps depending on how much dressing

fish sauce - 1-2 tbsps

honey -1tbsp

 

Whisk all together.

 

Chop up cabbage, chicken, green onion, and cilantro to form a nice salad serving and drizzle dressing over. Salt and pepper to taste and if you want add some peanuts to the top.

 

I'll also add rice noodles to the dish if I'm using it as a meal.

a couple of slices rare roast beef

blue cheese crumbles

1 tsp dijon mustard

lettuce

chopped tomatoes

1 large whole wheat fat free tortilla

 

 

1 beefsteak tomato

black pepper

olive oil

 

 

Smear mustard on tortilla. Lay out roast beef add the lettuce, chooped tomatoes and blue cheese crumble.

 

Slice two 1/2" pieces of the tomato. Dirzzle with olive oil, sprinkle with black pepper. Broil until just starting to blacken and is VERY hot.

 

 

That's something like 20-30g protein, a bunch of fiber and a couple of servings of veggies. The main source of fat is the blue cheese and adds that taste to make you think it's actually not as healthy as it really is.

 

This is one of my fave lunches, and was found in a Men's Health magazine.
