HowboutthemCowboys Posted September 5, 2008 Share Posted September 5, 2008 Slow Cooker Enchiladas 1 lb ground beef 1 c chopped onion 1/2 c chopped green pepper 1 can (16 oz) pinto or kidney beans, drained and rinsed 1 can (15oz) black beans, drained and rinsed 1 can(10 oz) diced tomatoes with green chilis,undrained 1/3 c water 1 tsp chili powder 1 tsp cumin 1/2 tsp salt 1/2 tsp black pepper 1 cup (4oz) shredded sharp cheddar 1 cup (4oz) shredded Monterey Jack 6 flour tortillas (6 or 7 inches) In a skillet,cook beef, onion and green pepper until beef is browned. Drain and return to pan. Add the next 8 ingredients,bring to a boil. Reduce heat,cover and simmer for 10 minutes. Combine cheeses. In a 5 quart slow cooker, layer about 3/4 beef mixture, one tortilla and about 1/3 cup cheese. Repeat layers. Cover and cook on low 5-7 hours. About 4 servings. Wrap each chicken breast with a slice of bacon. Secure with a toothpicks. Combine the sour cream and mushroom soup. Pour over the chicken breasts. Can this be doubled or what am I going to eat after my 14 year old gets a whiff of it? Gotta love cow, pig, and chicken in the same dish! I'm going to try it. You could add more bacon, I usually make sure each breast has bacon wrapped all the way around, so I use 1 to 2 slices.
