Carrot Cake

I've made carrot cake 3 times in the last month. I think it's kinda cool, in that it doesn't actually taste like carrots. It's more like a spice cake. I tell myself it's healthy because of all the carrots, but for all I know the nutrition is completely cooked out or negated by the sugar. Anyway:

 

Carrot Cake with Buttercream Frosting

 

Wet ingredients:

1 cup sugar

2 eggs

1/2 cup vegetable oil

1/4 cup applesauce

1 tsp. vanilla extract

2 cups finely grated carrots

 

Dry ingredients:

1 cup AP flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup chopped pecans or walnuts

 

Frosting:

1/4 cup room temp unsalted butter

1/4 cup room temp cream cheese

1 cup powdered sugar

 

Preheat oven to 350. Grease and flour loaf pan, cake pan, or line cupcake pan w/ papers. Whisk together all wet ingredients in large bowl. Sift together all dry ingredients except nuts in larger bowl. Pour wet into dry, add nuts and FOLD together until just combined, then pour into baking pan or cupcakes. Bake until toothpick comes out of the center dry (between 20 and 35 minutes depending on pan). Remove and let cool for half an hour.

 

For frosting, combine butter, cream cheese and flour in standing mixer. Starting slow, whip until fluffy and delicious.

 

 

The applesauce is the secret ingredient. It keeps the cake moist without changing the flavor.

The absolute best Carrot Cake I have EVER had is at a place called Cafe Con Leche and it is up in Newtown PA so its not to far from you if you are ever up in that area it will be worth it...plus they have excellent food too(they are off of State Street in Newtown)

OT: What is with the "upscale restaurants" putting raisins in the salad? Raisins belong in fruit cups, not green salads.

 

The Sheikette's currently on an upscale salad kick. Well, actually she's copying her favorite SaladWorks salad: Spinach leaves, cherry tomatoes, blue cheese crumbles, slivered almonds and dried cranberries. The dried cranberries really make it. They've got the sweet/savory/tart thing going on that's like raisins but way better.
