Best beef jerky

Kroeger. :wacko: (grocery store chain for those who don't know)

 

ie basically the cheaper "no frills" option. Last thing I would've expected, but I learned a long time ago that cost and quality don't necessarily go together.

 

Agree/not? I expect there are more than a few beef jerky connoisseurs (sp) out there -

Previous employee (retired after 46 years on the job) made jerky with the entire deer, not just the scraps like my BIL's do. Awesome.

Good call. Jerky made from good cuts of meat are that much better.

 

My buddy's boy is going to kill a deer tonight and the whole thing is going on the smoker for jerky this weekend. :drool:

I had some pretty exotic jerky over the summer - elk, bison, kangaroo, wild boar, alligator, ostrich, and yak. The ostrich was a little mushy.

 

I find that the best beef jerky available is made by small regional/local places because that's the closest you can get to homemade without having to actually make it yourself. I suggest heading to stores that sell local foods, or a farmers market to get the best jerky.

Gads, just about anything. Marinate strips of your favorite meat for 24 hours or so and put in the smoker over very low heat - I try to stick around 140o. I usually use oak and/or hickory for jerky, but you could play with other woods too.

 

Marinades can include any of the following and more:

 

Teriyaki sauce

Worcestershire sauce

Soy sauce

onion powder

garlic power

various peppers - chunky cracked black pepper with Worcestershire and garlic is a favorite of mine

brown sugar

ginger

pineapple juice

hot sauce - I love to marinate jerky meat in this stuff and just throw on the smoker - smokin' hot killer jerky

 

Pick some favorites and try it - you'll find a great combo soon enough. Good luck!

Thanks Jimmy. I don't know how I missed this before, musta forgot about it. I'm thinking about smoking some this weekend and searched for this topic.

 

Around how long on the smoker at 140ish Jimmy?
