INGREDIENTS 1 1/2 cups raw whole pumpkin seeds 2 teaspoons butter, melted 1 pinch salt DIRECTIONS Preheat oven to 300 degrees F (150 degrees C). Toss seeds in a bowl with the melted butter and salt. Spread the seeds in a single layer on a baking sheet and bake for about 45 minutes or until golden brown; stir occasionally. Does anyone have anything more interesting? You can also boil them in sugar then sprinkle a cinnamon and sugar mixture over them before baking. twiley Posted October 29, 2008 Share Posted October 29, 2008 Who knew you were the Barefoot Contessa of pumpkin seeds. How long do you boil them? I'll really get "Barefoot Contessa" on you now. I will also soak the seeds in a cold salt water solution for about 20 mins then bring that to a boil for about 10 mins. You can skip the soaking if you want because it may be too salty for your tastes. After boiling, I'll spread the seeds onto a baking sheet then apply a little EVOO. After that, I'll add the seasoning and bake at 400 for 10 mins. At this point I keep an eye on the seeds and let them go until they just start to get a little brown on them. They're very easy to overcook if you don't keep an eye on them after 10mins. I find anything less than 10 and they're still rubbery. Quote Link to comment Share on other sites More sharing options...

gilthorp Posted November 1, 2008 Share Posted November 1, 2008 Never tried the boiling thing...always rinsed and baked at 350 for about 25 minutes....lotsa salt. Will need to remember this.
