OK, so we did a version of this at the restaurant last night. We used hoisin instead of BBQ sauce and 5 spice instead of the spice mix they used. More importantly, we don't have a smoker at the restaurant so we slow roasted it and and then gave it some time on the grill before basting it with the hoisin.

 

So, understand that this is not a report on the dish as posted.

 

None the less, it's not the heartattack that everyone thinks it is. The meal was all pork and the pork belly dish was far more rich than this. If you think about it, it you took the bacon away and just added a tiny bit more sausage, nobody would freak out. It would just be a slab or pork sausage, something you might eat at breakfast or grilled before a ball game. Big deal. So, you add some bacon, It's not like there's a reaction and the two make each other exponentially fattier. Also, the slow cooking goes along way to rendering out a ton of the fat, so there's that as well.

 

Further, there's a ton of variance from one pork sausage to the next in terms of how fatty they are. This would have way more to do with the richness than adding bacon to the mix.

 

I'm not saying all this to dog the dish because it was freaking tasty as hell. Rather that I've now been linked to this thread twice and both times there's a chorus of "Have to agree here my blood got thicker just looking at that!" I'm here to tell you that it's not that gnarly.
