I got some of this for Christmas. It tastes great on fish and chocolate ice cream. Pretty good on eggs too. My wife thinks it just tastes like salt on her food.

 

Anyone use gourmet type salts?

Jeffery Steingarten who's a rather prominent food writer and a big fan of fancy salts did a rather scientific study to determine if there was any difference. He admitted that he, rather unscientifically, really wanted the results to point to the fact that one could tell the difference. He was disappointed with the results. At least for the most part. Dissolved in water, there is no difference. After all, they are all simply NaCl. So, to that extent, your wife is completely correct. There are some salts, like Indian Black salt that have other minerals in them and taste very distinctive. Only, that often means kind of nasty and weird.

 

If there's a difference, it's in the texture, which is why they are nice salts to garnish with. In general, I've tried to base my cuisine on more humble ingredients rather than things like this and find that kosher salt has a nice enough texture to garnish things with. However, the almost creamy nature of Fleur is not lost on me and I do appreciate it when it is used.

 

Besides garnishing things like carpaccio, I like chocolate truffles made with it.
