Better Turkey

I did my turkey covered in 2 pounds of salt pork and draped with a wet cheesecloth (recipe courtesy of ATK). I didn't really notice a major difference in the taste or moistness of the bird. Still, playing with all that pig belly sure was fun.

I don't know what to say here...My folks and my wife's mom--each will only make their turkey in a roasting pan. So, when we hosted, my MIL brought the roasting pan and the bird was perfect, absolutely so moist that when I carved, the meat was folding off the knife. Amazing.
