Artichoke dip

Had some at a party last night. I have always been a big fan. Found this recipe on line. Anyone have any variations they care to share ?

 

2 jars (6 oz. each) marinated artichoke hearts, drained, diced

3/4 cup sour cream

1/4 cup mayonnaise

1/4 cup Parmesan cheese, grated

1 tsp. (or, to taste) dried tarragon leaves (optional)

 

Combine all ingredients in a medium saucepan and cook over very low heat for approximately 30 minutes. Transfer to a medium serving bowl and serve warm.

2 cans of artichoke hearts - slightly drained & chopped in blender; place in large bowl

Add 2 cups of mayonnaise & 2 cups of grated parmesan cheese (I container from store) & stir together.

Drizzle EVOO on top & sprinkle with additional Parm. cheese.

 

Place in baking dish approx. 1-1 1/2 inches deep and bake at 350 for 30 mins. May want to broil on low at end for <5 mins. to add crispy topping.

 

Serve with basket of Triscuts.
