Have one leftover from the cow that we butchered this past fall. Open to any and all ideas.

Are you referring to what is sometimes called the shoulder roll? If so, we braise the hell out of it and make our barbacoa tacos with it. However, I've been told that some cut a poor-man's ribeye from a portion of it (though I'm leery of that theory and think it was just a push beef salesmen trying to make the product sound nicer than it is).
